Refreshing, Low-Calorie Watermelon Slush

Over the Labor Day weekend, I enjoyed some time in the pool (when it wasn’t raining). And because of the heat, I really was craving something cool and refreshing to drink. I wanted to run over to Sonic during their Happy Hour to get a slush but decided I did not need those calories nor did my wallet need to be slimmer. I remembered I had frozen some watermelon and figured I would try and make my own slush. I can’t wait to make this again soon – it was so scrum-didily-upmtious (spelling?).

So speaking of freezing watermelon – one of my biggest tips for eating fresh foods is to freeze it when you have too much of it or you are going out of town Monday to Thursday (shout out to my fellow road warriors). I think watermelon is one the best fruits to freeze because of it’s water content. On Sunday night after I have packed my suitcase, I check the refrigerator and determine what produce will spoil before I make it back on Thursday night. I chop up the produce into manageable pieces (watermelon in cubes), put it in a Ziploc bag and stuff in the freezer.

Back to the recipe, it is super simple – there are just 3 ingredients! Yes, only 3 and it can be 2 if you choose to exclude the sweetener! And all you need is a blender to mix all of the yummy things. And the best thing – this is only 90 calories – seriously!!!

What you need: 
1 cup of cubed frozen watermelon
1 1/2 cup of sparkling water (Sprite or still water can be used – I used my Soda Stream to make my sparkling water, but any sparkling water will do)
1 tbsp of agave nectar (optional)

How to make it:
1. Add the frozen watermelon to the blender.
2. Add half of the sparkling water (or other liquid) to the blender and puree until smooth.
3. Add the rest of the liquid until you reach your desired consistency
4. Continue to puree and mix the watermelon and water.
5. Add the agave and give the mixture a quick blend to mix it in.
6. Pour into a glass, add a fun straw and ENJOY!

Here in Houston, I will be able to drink this for as long as I can get my hands on some great watermelon!

For 90 calories, this is a great treat I can enjoy guilt free anytime. And if you are feeling like a little alcohol – just add a shot (or two) of your favorite liquor (my suggestion – add some Malibu – but my friends would tell you that Malibu is my go to and I may be slightly obsessed).
